To ensure assurance and safety for our customers, we are committed to paying attention to our oysters as the following #1 through #6.
- Through our high standard for oysters to be consumed raw, we provide oysters to our guests that surpass the criteria from the Food Sanitation Act stipulated by the Ministry of Health Labour and Welfare.
- The Most Probable Number (MPN) of common bacteria and Escherichia coli and the Norovirus inspection are conducted on a monthly basis at each oyster farm.
- The oysters are purified by putting each one through ultraviolet-sterile salt water for at least 18 hours prior to shipment.
- We implement our own sampling approach according to the Food Sanitation Act to check the MPN of common bacteria and Escherichia coli every month. In addition, we conduct the Norovirus inspection every December, January and February.
- The MPN check on common bacteria and Escherichia coli are conducted every month for all the store employees. The Norovirus inspection for all the store employees is conducted every December, January and February as well.
- All oysters served either cooked or raw, are edible raw. Oysters for cooking purpose only are not served.
We will do our best to ensure customer assurance and safety. However we can not guarantee the complete security of the oysters due to the natural characteristic features and we would appreciate your understanding.

Note
- It is reported that individuals that consume raw oysters may become ill . Especially be aware for those with experience of previously becoming ill and as well as people consuming raw oysters for the first time.
- Please avoid consuming raw oysters for those with fatigue and poor physical condition, elderly people, pregnant women, and children.
- Oyster is a highly nutritious food; however, it may lead to illness so please be aware of overconsumption.
